  • lb uncooked boneless skinless chicken breast
  • 1⁄2
  • cup celery finely diced
  • 1⁄3
  • cup dill pickles or 1/3 cup sweet gherkin finely diced
  • 1⁄4
  • cup reduced-calorie mayonnaise
  • 2
  • tablespoons reduced-fat sour cream
  • 2
  • tablespoons fresh parsley chopped
  • 1
  • teaspoon Dijon mustard
  • 1
  • teaspoon fresh lemon juice
  • 1⁄2
  • teaspoon table salt
  • 1⁄4
  • teaspoon black pepper freshly ground

Method
 

  1. Place chicken in a large saucepan and pour in enough water to cover it; set pan over high heat and bring to a boil. Boil until chicken is cooked through, about 10 minutes; drain. When chicken is cool enough to handle, cut into 1-inch cubes.
  2. Transfer chicken to a large bowl and add celery, pickles, mayonnaise, sour cream, parsley, mustard, lemon juice, salt and pepper; mix until blended. Yields about 1 cup per serving.
  3. For a Waldorf-like chicken salad, stir in 1/3 cup of diced apples and 2 tablespoons of chopped walnuts (for a total points value of 5 per serving).
