- If using fresh or rotisserie chicken, chop or shred it into small, bite-sized pieces.
- In a medium bowl, combine mayonnaise, Dijon mustard (if using), onion powder, and lemon juice. Stir until smooth.
- Mix in diced celery and sweet relish. Stir to blend evenly.
- Add the chicken to the mixture. Stir until all pieces are coated well.
- Taste and add salt and pepper as needed.
- Cover and refrigerate for at least 30 minutes before serving. This helps the flavors meld.
