Ingredients
  

  • 2 cups cooked chicken breast shredded or diced (rotisserie works well)
  • 1/2 cup celery finely chopped
  • 1/4 cup red onion finely diced (optional)
  • 1/2 cup seedless red grapes halved (or substitute with dried cranberries)
  • 1/3 cup toasted sliced almonds or chopped pecans
  • 1/2 cup mayonnaise use Greek yogurt for a lighter version
  • 1 tsp Dijon mustard
  • 1 tsp fresh lemon juice
  • Salt and pepper to taste
  • Optional: Fresh parsley or dill for garnish

Method
 

Prepare the Chicken:
  1. If using fresh chicken, cook and let it cool before chopping or shredding.
  2. Rotisserie chicken works great for convenience.
Mix the Salad:
  1. In a large bowl, combine chicken, celery, grapes, red onion, nuts, and parsley.
Make the Dressing:
  1. In a small bowl, whisk together mayonnaise, Dijon mustard, lemon juice, and honey (if using).
  2. Season with salt and pepper to taste.
Combine:
  1. Pour the dressing over the chicken mixture.
  2. Gently fold until everything is evenly coated.
Chill & Serve:
  1. Refrigerate for at least 30 minutes for best flavor.
  2. Serve on a bed of lettuce, in a sandwich, or with crackers.
