Prepare the Chicken:
- If using fresh chicken, cook and let it cool before chopping or shredding.
- Rotisserie chicken works great for convenience.
Mix the Salad:
- In a large bowl, combine chicken, celery, grapes, red onion, nuts, and parsley.
Make the Dressing:
- In a small bowl, whisk together mayonnaise, Dijon mustard, lemon juice, and honey (if using).
- Season with salt and pepper to taste.
Combine:
- Pour the dressing over the chicken mixture.
- Gently fold until everything is evenly coated.
Chill & Serve:
- Refrigerate for at least 30 minutes for best flavor.
- Serve on a bed of lettuce, in a sandwich, or with crackers.
