What Makes Newk’s Chicken Salad Special?

Newk’s Chicken Salad stands out for its perfect balance of flavors and textures. It’s not just another deli salad—it’s a blend of savory, sweet, creamy, and crunchy elements that work together in every bite.

At the heart of this recipe is tender, chopped chicken. Unlike shredded chicken salads, Newk’s uses small, clean chunks that give it a meatier texture. The dressing is rich and creamy, made primarily with mayonnaise for that classic Southern-style base.

What truly sets it apart are the mix-ins. Red grapes add a burst of sweetness and juiciness, while crunchy pecans bring a toasted nutty flavor. These additions create contrast without overpowering the chicken.

The seasoning is simple but effective—usually just salt, pepper, and a touch of garlic or onion powder. This keeps the focus on the natural flavors of the main ingredients.

Ingredients You’ll Need

To recreate Newk’s famous chicken salad at home, you’ll need a handful of simple, quality ingredients. Each one plays a key role in building the salad’s signature flavor and texture. Here’s what you’ll need:

Cooked Chicken (3–4 cups, chopped)

The base of the salad. Use boneless, skinless chicken breasts or rotisserie chicken for convenience. The chicken should be cooked, cooled, and chopped into small bite-sized pieces. Avoid shredding—the chunkier texture is what gives Newk’s salad its hearty bite.

Mayonnaise (¾–1 cup)

Mayonnaise gives the salad its creamy consistency. Use a high-quality, full-fat mayo for the best flavor. If you want a lighter version, you can substitute part of it with Greek yogurt or a light mayo alternative.

Red Seedless Grapes (1 cup, halved)

Sweet grapes add a juicy pop and balance the savory chicken. Make sure to use fresh, firm grapes and cut them in half to distribute evenly throughout the salad.

Pecans (½–¾ cup, chopped)

Toasted pecans bring a crunchy, nutty flavor that complements the creamy base. You can toast them lightly in a skillet or oven for extra depth. If needed, walnuts or almonds can be used as substitutes.

Celery (optional, ½ cup finely chopped)

Some versions include celery for an extra layer of crunch. It’s optional but adds a refreshing bite that blends well with the other textures.

Seasonings

Salt and black pepper to taste. Essential for bringing out all the flavors. Garlic powder or onion powder (optional, ¼ tsp) adds subtle depth without overpowering the salad.

Optional Add-Ins:

  • Green onions: for a light onion flavor.
  • Dijon mustard: a small spoonful can add a mild tang.
  • Hard-boiled eggs: some Southern variations include chopped eggs for extra richness.

Choosing the Right Chicken

The chicken is the foundation of Newk’s Chicken Salad, so choosing and preparing it properly is essential. The right texture, flavor, and moisture level make all the difference in achieving that authentic, deli-style taste.

Best Types of Chicken to Use

Boneless, Skinless Chicken Breasts

This is the most commonly used option for its lean texture and neutral flavor. It cooks evenly and holds up well when chopped.

Rotisserie Chicken

A convenient choice that adds extra flavor from the slow-roasting process. Make sure to remove the skin and shred or chop the meat into small chunks.

Poached Chicken

Poaching is a gentle cooking method that keeps the chicken juicy and tender. Simmer the chicken breasts in lightly salted water or broth with herbs like bay leaves or thyme for extra flavor.

Baked or Roasted Chicken

Oven-roasted chicken can add a slightly deeper flavor and firmer texture. Lightly season with salt and pepper before baking to enhance the taste.

Tips for Preparing the Chicken

  • Cool Before Chopping: Let the chicken cool completely before dicing it. Warm chicken can make the mayo separate or turn the salad soggy.
  • Chop, Don’t Shred: Newk’s salad features clean, uniform cubes rather than shredded chicken. Use a sharp knife to cut into small, bite-sized pieces for the best texture.
  • Avoid Overcooking: Dry chicken won’t absorb the dressing well. Cook just until done—internal temperature should reach 165°F (74°C).
  • Season Lightly: If cooking from raw, season with salt and a touch of garlic or onion powder. This helps enhance flavor without overpowering the salad.

Make-Ahead Tip

You can cook and chop the chicken a day ahead and store it in the fridge. This not only saves time but also helps the salad hold its texture better when you mix it later.

Step-by-Step Preparation Guide

Now that you have your ingredients ready and chicken prepped, it’s time to bring everything together. This step-by-step guide will walk you through making a fresh, flavorful batch of Newk’s-style chicken salad right in your kitchen.

Step 1: Prep Your Ingredients

  • Chicken: Ensure your cooked chicken is cool and chopped into small, uniform cubes. This gives the salad the signature chunky texture.
  • Grapes: Wash and halve the red seedless grapes. Pat them dry with a paper towel to prevent excess moisture.
  • Pecans: If not already toasted, lightly toast chopped pecans in a dry skillet over medium heat for 2–3 minutes until fragrant. Let them cool completely.
  • Celery (if using): Finely dice for a consistent crunch.
  • Other Add-ins: Chop green onions or hard-boiled eggs now, if including.

Step 2: Make the Dressing

In a large mixing bowl, combine:

  • ¾ to 1 cup of mayonnaise (adjust to your preferred creaminess)
  • Salt and pepper to taste
  • Optional: ¼ teaspoon garlic powder or onion powder

Stir until smooth. Taste and adjust seasoning if needed.

Step 3: Combine the Salad

To the bowl with the dressing, add:

  • 3–4 cups chopped cooked chicken
  • 1 cup halved grapes
  • ½–¾ cup chopped toasted pecans
  • ½ cup celery (optional)
  • Any additional mix-ins you’re using

Gently fold everything together with a spatula or spoon until the dressing evenly coats all ingredients. Be careful not to mash the grapes or chicken pieces.

Step 4: Chill for Best Flavor

Cover the bowl with plastic wrap or transfer the salad to an airtight container. Refrigerate for at least 1–2 hours before serving. This allows the flavors to meld and the texture to firm up.

Step 5: Serve and Enjoy

Serve chilled on a croissant, in lettuce cups, or with crackers. Garnish with extra pecans or a sprinkle of black pepper if desired.

Tips for Perfecting the Recipe

Getting Newk’s Chicken Salad just right is all about balance—between creaminess and crunch, savory and sweet, hearty and fresh. Here are key tips to help you perfect the recipe every time and get as close as possible to the original flavor and texture.

Use High-Quality Ingredients

This salad is simple, so the quality of each ingredient matters. Use fresh, firm grapes, real mayonnaise (like Duke’s or Hellmann’s), and fresh, well-cooked chicken. Even a small improvement in ingredients will noticeably elevate the final result.

Don’t Overdo the Mayo

Start with a smaller amount of mayo and add more as needed. You want the salad to be creamy but not soupy. The goal is a coating, not a sauce. Too much mayo can overpower the other ingredients and make the salad heavy.

Let the Salad Chill Before Serving

The flavors develop and blend better after chilling for at least 1–2 hours. If you’re in a rush, 30 minutes will help, but overnight chilling is ideal for the best flavor and texture.

Keep the Chicken Chunky

Newk’s salad uses small, neat cubes of chicken rather than shredded pieces. Uniform chunks give a satisfying bite and help prevent the salad from turning mushy.

Balance Sweet and Savory

The grapes provide a sweet element, while the pecans and chicken add richness. Avoid using too many grapes, or the salad may become overly sweet. A 1:3 ratio of grapes to chicken is a good guideline.

Toast the Pecans

Toasting brings out the full flavor of pecans and adds a subtle crunch. Don’t skip this step—raw pecans can taste flat in comparison.

Season Lightly but Thoughtfully

Simple seasoning works best. Salt and pepper are usually enough, but a pinch of garlic or onion powder adds depth. Taste as you go, especially after chilling.

Avoid Watery Ingredients

Make sure all mix-ins—especially grapes and celery—are patted dry before adding them. Excess water can make the salad watery and dilute the flavor.

Add Extras with Care

If you’re experimenting with add-ins like Dijon mustard, chopped eggs, or green onions, add them in small amounts first. They can change the flavor quickly and overpower the simplicity of the original.

Whether you’re serving a crowd, packing a lunch, or enjoying a light dinner, there are many delicious ways to present and pair this creamy, savory-sweet salad. Here are some serving ideas and combinations to elevate your experience.

Classic Croissant Sandwich

The most popular way to enjoy Newk’s Chicken Salad is on a flaky croissant. The buttery bread complements the creamy salad perfectly. Add lettuce or spinach for a fresh crunch, and you’ve got a satisfying, deli-style sandwich.

Lettuce Wraps (Low-Carb Option)

For a lighter or gluten-free option, spoon the salad into large lettuce leaves (like romaine or butter lettuce). It’s a refreshing, low-carb way to enjoy the salad without sacrificing flavor.

On Toast or Crackers

Spread chicken salad on toasted sourdough, whole grain bread, or serve it as a dip with your favorite crackers. This is a great appetizer or snack option for parties or picnics.

Stuffed Tomatoes or Avocados

For an elegant presentation, hollow out large tomatoes or ripe avocados and fill them with a scoop of chicken salad. These are ideal for a brunch, lunch platter, or even a light dinner.

Chicken Salad Platter

Serve it as part of a composed salad plate with:

  • Mixed greens or spinach
  • Sliced cucumbers
  • Cherry tomatoes
  • Boiled eggs
  • Fresh fruit like melon or apple slices

This is a wholesome and visually appealing meal perfect for summer or a light, balanced lunch.

Wraps and Pita Pockets

Tuck the chicken salad into a flour tortilla or whole wheat wrap along with leafy greens, thinly sliced red onion, and shredded carrots. Or fill pita pockets for a quick and portable meal.

With Soup or Side Salad

Serve alongside a cup of soup—like tomato basil or broccoli cheddar—for a cozy and filling lunch combo. It also pairs well with a fresh garden salad or pasta salad.

Chicken Salad Sliders

Use mini buns or Hawaiian rolls to make bite-sized sliders—perfect for gatherings or potlucks. Add a pickle slice for a sweet-and-savory twist.

Cut crustless chicken salad sandwiches into small triangles for brunch spreads, baby showers, or afternoon tea.

Storage and Make-Ahead Tips

Making Newk’s Chicken Salad ahead of time can save you time and ensure that you always have a delicious meal ready to go. With the right storage techniques, this salad stays fresh and flavorful for several days. Here are the best practices for storing and prepping it in advance.

How Long Does Chicken Salad Last?

When stored properly, Newk’s Chicken Salad can last up to 3–4 days in the refrigerator. The freshness of the ingredients will start to diminish after that, particularly the grapes, which may become soggy over time. Be sure to store it in an airtight container to preserve the flavor and texture as long as possible.

Storing Chicken Salad

To maintain the best texture and flavor:

  • Use an airtight container: This prevents the salad from absorbing unwanted odors from the fridge.
  • Avoid storing with extra ingredients: If you’re adding fresh herbs, extra grapes, or nuts, it’s better to store those separately. Nuts, in particular, can lose their crunch if mixed in with the salad for too long.

Make-Ahead Tips for the Best Results

If you’re planning to make the salad in advance, here are a few things to consider:

  • Prepare the chicken and dressing separately: If possible, store the chicken and the dressing separately and combine them the day you plan to serve. This helps the chicken stay firmer and prevents it from soaking up too much of the mayo.
  • Grapes and nuts: Grapes should be halved and patted dry before storing, but it’s best to add them just before serving to prevent excess moisture. Similarly, add the toasted pecans last to keep them crunchy.
  • Chill for at least 1 hour: While it’s fine to store the salad overnight, at least an hour of chilling before serving allows the flavors to meld together, giving you a more flavorful result.

Freezing Chicken Salad

While it’s not ideal to freeze chicken salad, you can freeze the chicken ahead of time to save on prep work. If you do choose to freeze the salad, keep in mind:

Freezing the mayo-based dressing can cause it to separate when thawed, affecting texture and consistency. If freezing chicken, store it in an airtight container or heavy-duty freezer bag for up to 3 months. When ready to use, thaw it in the refrigerator overnight before preparing your salad.

Quick Fixes for Leftovers

If you have leftover chicken salad that’s a bit too runny or lost its crispness, here are some quick fixes:

  • Adjust the mayo: If the dressing has become too thin, stir in a bit more mayo to thicken it up.
  • Add fresh ingredients: Adding a little more celery, grapes, or fresh pecans can help revive the salad’s flavor and texture.
  • Serve as a dip: If the texture has softened, you can serve the salad as a dip with crackers, pita, or vegetables.

Storing in Small Batches

If you’re not sure how much you’ll need at a time, consider portioning out the chicken salad into smaller containers. This way, you can grab just what you need each time, keeping the rest of the salad fresh for longer.

Healthier Variations and Substitutions

If you’re looking to lighten up Newk’s Chicken Salad or make it more suited to specific dietary needs, there are several easy swaps and variations you can try. These substitutions allow you to maintain the core flavors of the salad while making it a bit healthier or catering to particular preferences.

Lighten the Dressing

Traditional Newk’s Chicken Salad uses mayonnaise as its base, but you can easily make it lighter without compromising too much on flavor:

  • Greek Yogurt: Swap half (or all) of the mayo for plain Greek yogurt. It’s creamy and adds a nice tang, while cutting back on calories and fat. Greek yogurt is also a great source of protein.
  • Low-Fat or Light Mayo: If you want to keep the texture close to the original but reduce the fat content, use a light mayonnaise or a low-fat version. However, keep in mind that some light mayos have a slightly different flavor or consistency.
  • Avocado: For a healthy fat option, substitute part of the mayo with mashed avocado. This will give the salad a creamy texture while adding heart-healthy fats.

Make it Dairy-Free or Vegan

For those avoiding dairy or following a plant-based diet, there are easy ways to adapt the recipe:

  • Vegan Mayo: Use a plant-based mayo alternative made from ingredients like olive oil or aquafaba (chickpea water). This will keep the creamy texture while making the dish vegan-friendly.
  • Non-Dairy Yogurt: If you prefer to use yogurt as a dressing base, opt for coconut, almond, or soy yogurt to replace the dairy without sacrificing creaminess.

Reduce Sugar and Carbs

If you’re looking to cut back on sugar or carbs, here are some adjustments you can make:

  • Skip the Grapes or Use Fewer: While grapes add a sweet pop, they do introduce natural sugars. You can reduce the amount or replace them with lower-sugar fruits like sliced strawberries, apples, or even cranberries (fresh or dried, unsweetened).
  • Use a Lower-Carb Sweetener: If you’re using any sweeteners in your dressing (such as honey or maple syrup), consider switching to a lower-carb alternative like stevia, monk fruit, or erythritol.

Make it Gluten-Free

Newk’s Chicken Salad is naturally gluten-free as long as you avoid using bread or crackers that contain gluten. Here are a few tips:

  • Serve on Gluten-Free Bread or Crackers: If you’re making a sandwich or serving the salad with crackers, opt for gluten-free bread or crackers. There are many great-tasting options available in stores.
  • Lettuce Wraps: Instead of using bread, serve the salad in large, crisp lettuce leaves. This is an easy way to reduce carbs and make the dish more refreshing.

Add More Veggies

For a more nutrient-dense version of the salad, you can add more vegetables:

  • Shredded Carrots: Add color and crunch with some shredded carrots. They’re low in calories and high in vitamin A.
  • Cucumbers: Thinly sliced cucumbers bring a refreshing crunch without adding many calories.
  • Bell Peppers: Red, yellow, or orange bell peppers can add a sweet flavor and additional fiber.
  • Avocado: In addition to using it for the dressing, adding diced avocado will make the salad even creamier and boost the healthy fat content.

Substitute the Nuts

If you want to avoid nuts due to allergies or simply prefer a different crunch, there are a few alternatives:

  • Seeds: Sunflower seeds, pumpkin seeds, or chia seeds can replace pecans, adding texture and a nutritional boost.
  • Crispy Chickpeas: For a crunchy and protein-packed alternative, try using roasted chickpeas in place of nuts.
  • Almonds: If you prefer a different nut, slivered or chopped almonds work well, offering a light crunch and mild flavor.

Protein Boost

If you want to increase the protein content of your chicken salad without adding more meat, consider these options:

  • Hard-Boiled Eggs: Adding one or two chopped hard-boiled eggs will give the salad a protein boost and make it even more filling.
  • Chickpeas or Beans: For a vegetarian option, you can add chickpeas, white beans, or black beans to the mix, which will provide plant-based protein while maintaining a similar texture to the pecans.

Reduce Sodium

To lower the sodium content of the salad:

  • Use a Low-Sodium Mayo: Look for a reduced-sodium version of mayonnaise, or make your own using olive oil and egg yolks.
  • Limit Salt: Be mindful of the amount of salt added during preparation. Taste the salad as you go to avoid over-seasoning, especially if you’re using other salty ingredients like store-bought mayo.

Common Mistakes to Avoid

Even though Newk’s Chicken Salad is relatively easy to make, there are a few common mistakes that can affect its flavor, texture, and overall appeal. By being mindful of these errors, you’ll ensure that every batch of chicken salad is as delicious as the last.

Overcooking the Chicken

One of the most common mistakes is overcooking the chicken. Chicken that is too dry will make the salad feel tough and less appetizing. To avoid this:

  • Cook to the Right Temperature: Ensure the chicken reaches an internal temperature of 165°F (74°C), and remove it from the heat as soon as it’s done.
  • Moisture Matters: If using a rotisserie chicken, opt for one that’s freshly made to maintain moisture. Leftover rotisserie chicken can sometimes be drier.
  • Poaching Option: Poaching chicken breasts in water or broth is an excellent way to keep them tender and juicy for the salad.

Using Too Much Mayo

It’s easy to go overboard with mayonnaise, but using too much will overwhelm the other ingredients and make the salad too creamy and heavy. Follow these tips:

  • Add Gradually: Start with a smaller amount of mayo and add more to taste. The dressing should lightly coat the chicken, not drown it.
  • Taste as You Go: Make sure to taste the salad as you add mayo, adjusting for consistency and flavor.
  • Alternative Creaminess: If you find the salad too rich, substitute part of the mayo with Greek yogurt or avocado to balance the texture.

Overcrowding the Bowl

Trying to mix all the ingredients in one bowl at once can cause the chicken, grapes, and pecans to get crushed or soggy. To prevent this:

  • Mix in Batches: If you’re making a large batch, consider mixing the dressing first and then gently folding in the chicken and other ingredients in stages.
  • Gentle Folding: Use a spatula to gently fold the ingredients together rather than stirring vigorously. This helps maintain the integrity of the chicken and prevents grapes from becoming mushy.

Not Drying the Grapes

Excess moisture from the grapes can make your salad watery and dilute the flavors. This is particularly important if you’re making the salad in advance. To prevent this:

  • Dry the Grapes: After washing the grapes, pat them dry with paper towels before adding them to the salad.
  • Use Firm Grapes: Soft or overripe grapes release more water. Always use fresh, firm grapes for the best texture.

Skipping the Chilling Time

While it’s tempting to dig in right away, skipping the chilling step can affect the flavor. The salad benefits from time in the fridge to let the flavors meld together.

  • Refrigerate for 1–2 Hours: Even if you’re in a rush, let the chicken salad chill for at least an hour before serving. This helps the dressing absorb into the chicken and allows the flavors to harmonize.
  • Overnight Chill: For maximum flavor, prepare the salad the night before you plan to serve it. The extra chilling time deepens the taste.

Not Adjusting for Personal Taste

While there’s a standard recipe, Newk’s Chicken Salad can be easily customized. Not adjusting it to your taste preferences can result in a bland or overly rich salad.

  • Taste and Adjust: Add more salt, pepper, or garlic powder if needed. You may also want to adjust the sweetness level by adding more or fewer grapes.
  • Texture Adjustments: If you prefer more crunch, add more pecans or celery. If you like it creamier, feel free to add a little more mayo or Greek yogurt.

Using Wet or Mushy Pecans

Pecans add a crucial crunch to the salad, but wet or soggy pecans can take away from that texture. Avoid this by:

  • Toasting the Pecans: Lightly toast the pecans in a dry skillet or in the oven to bring out their flavor and ensure they stay crisp in the salad.
  • Storing Separately: If you’re making the salad in advance, store the pecans separately and add them just before serving to preserve their crunch.

Over-Promising and Underdelivering

Sometimes, the salad doesn’t live up to expectations because too many ingredients or variations are added. Stick to the essentials to maintain the flavor balance.

Keep It Simple:

The beauty of Newk’s Chicken Salad lies in its simplicity. Avoid adding too many extras or trying to change it too much. Keep the balance of chicken, grapes, nuts, and mayo as the focal point.

Not Properly Storing Leftovers

Improper storage of leftover chicken salad can lead to texture and flavor degradation. To store leftovers correctly:

  • Airtight Container: Store the chicken salad in an airtight container to prevent it from drying out or absorbing other smells from the fridge.
  • Separate Wet and Dry Ingredients: If you’ve added items like nuts or fresh vegetables, store them separately to preserve their texture and freshness.

Conclusion
